½ each red, yellow, orange bell pepper sliced
1 poblano pepper sliced
¼ red onion sliced
Season All to taste
Smokey seasoning to taste
¼ cup paprika
½ teaspoon cumin
¼ cup olive oil
Roasted Poblano Sauce
2 poblano peppers roasted
1 cup low sodium chicken stock
3 cloves garlic
3 oz. fresh cilantro
juice from 1 lime
