Potato Soup with Bacon and Cheese.. Awesome Recipe July 14, 2014

My Potato soup recipe this is really good stuff…Thanks :}

Ingredients: 12 slices of bacon, cooked and crushed. Save for later. 8 Russet potatoes, peeled and cubed. Then soaked in water. 1 lg. Vidalia onion, minced 2 cloves garlic, minced 2 cups chicken stock 1 12 oz. can Evaporated milk or 3 cups whole milk Additional 1 cup of whole milk (if evaporated milk used) 1 10.3 oz. cream of chicken soup Salt and pepper 1 cups cheddar cheese, shredded Optional sour cream Optional Ground red pepper

Recipe: In a deep stewing pot, cook bacon. Set aside and crush when cool. Save a bit of the grease in the pot when done. In the same pot, saute the onion until translucent. Add garlic, saute for ~30 seconds Add potatoes, milk, can of soup, salt and pepper. Mix until combined. Bring to a boil. If you want heat, add red pepper. Once boiling, bring down to a simmer and let simmer 20-30 minutes or until potatoes become fork tender. Get new stove. Once potatoes are done add bacon, cheese and mix. Cook another 20 minutes until done. Serve with extra cheese on top and a dollop of sour cream. Enjoy.
